Ingredients
For the crust:
- 2 1/2 cups rolled oats
- 1/4 cup almond butter
- 1/3 cup maple syrup
For the filling:
- 2 cups raw cashews
- 1 cup Greek yogurt
- 6 Tbsp lemon juice
- 4 Tbsp maple syrup
- 4 Tbsp coconut oil
- 2 1/2 Tbsp of black currant powder
- 2 tsp fresh orange zest
Directions
- For the crust, mix oats in a food processor until fine. Add almond butter and syrup and blend until combined. Press into the bottom of a 8x8 pan lined with parchment paper. Place in refrigerator.
- Next, for the filling, soak the cashews in boiling water for 10 min and then drain. Place in a blender along with other filling ingredients. Mix until smooth and then pour the filling over the crust.
- Place back in refrigerator until set and top with fresh fruit (optional).
