Black Currant Citrus Bars

Ingredients

For the crust:

  • 2 1/2 cups rolled oats
  • 1/4 cup almond butter
  • 1/3 cup maple syrup

For the filling:

  • 2 cups raw cashews 
  • 1 cup Greek yogurt
  • 6 Tbsp lemon juice
  • 4 Tbsp maple syrup
  • 4 Tbsp coconut oil
  • 2 1/2 Tbsp of black currant powder
  • 2 tsp fresh orange zest

Directions

  1. For the crust, mix oats in a food processor until fine. Add almond butter and syrup and blend until combined. Press into the bottom of a 8x8 pan lined with parchment paper. Place in refrigerator.
  2. Next, for the filling, soak the cashews in boiling water for 10 min and then drain. Place in a blender along with other filling ingredients. Mix until smooth and then pour the filling over the crust. 
  3. Place back in refrigerator until set and top with fresh fruit (optional).
